Lisa’s favorite dessert is this single-serving key lime pie, which requires just 7 ingredients and takes less than 30 minutes to prepare. This key lime pie for one is tangy, smooth, and sweet; it can be prepared in an Instant Pot® 3-quart or 6-quart without heating up your kitchen; and it serves just one person with no waste or leftovers. This recipe is identical to its original big brother in terms of tartness, smoothness, and sweetness, but it comes in a single serving size.
• 8 minutes of hands-on time • 20 minutes of cooking time • 1 serving
14 cup graham cracker crumbs for the crust 1 tablespoon melted butter 12 teaspoons sugar 1/16 teaspoon cinnamon powder
Filling 1 big yolk of an egg 12 cup condensed milk, sweetened lime juice (two teaspoons) 1 cup water 12 teaspoon lime zest

with the purpose of serving
2 tbsp. whipped cream (sweetened) a quarter teaspoon of lime zest
1. Combine all Crust ingredients in a medium dish and press into an 8-ounce ramekin. Remove from the equation. 2. Combine all Filling ingredients (excluding water) in a separate medium dish and pour over crust. Wrap foil around the dish. 3. Fill the Instant Pot® with water and place the trivet on top. Place the ramekin on top of the trivet. 4. Turn the knob to Sealing and close the lid. 5. Select Manual or Pressure Cook and set the timer for 10 minutes. 6. When the timer sounds, wait 10 minutes for the pressure to naturally dissipate, then remove the lid. 7. Allow pie to cool to room temperature before chilling for 6–8 hours or overnight. 8. Garnish with whipped cream and a quarter teaspoon of lime zest.
